Duo Deli Sandwich - Perfect Picnics in Perth

Its been a while since I wrote, I know, but its been a very busy few weeks with Max home from uni, Roxanne off to Thailand and a brand new puppy to look after! And that’s just the family stuff… The restaurants have been so, so busy with the summer season in full swing. This gorgeous weather we’ve been having sends everyone off to the park and Dennis and Sylvie have been rushed off their feet trying to keep up with Duo’s Deli.  It seems our fabulous baguettes, cheeses, salamis and homemade frangipan make the perfect picnic…  I have to say, I agree entirely!

If you have been into Pig Halle you’ll have met our new restaurant manager, Loic.  Loic comes with experience, energy and youthful enthusiasm… exactly how we like our team! He is full of great ideas and has been chatting happily about social media, viral marketing and the sort of thing that seems to come naturally to a young manager in this modern day industry of ours.  I know I’m doing ok here, blogging and facebook, but the truth is I was practically dragged into it – forced by my children to address modern communication methods and look at a fresh approach to keeping customers up to date.   And Herve…  Herve is worse than I am!

You’ll remember I was referred to as a “Veteran Restaurateur” in our recent review.  Well when I started back in the late eighties you were handed a check pad, told to bring your pen, given a clean apron and then cut loose.  As the responsibility grew into management roles I was balancing cash, overseeing stock checks and hiring and firing.  All of this was done using paper and pen, journals and records all in huge pads and big files. Marketing was a leaflet on the table or a poster on the back of the loo door and, if your budget would stretch, an advert in the local paper.   People, I started at a point when you didn’t have a website; lets not get into facebook or twitter or blogs!

When we opened our first restaurant as owner operators it was 1992.  You made your name a success by being the best at what you did. People talked about food and service and you waited patiently as word of mouth began to spread and people came in talking about their friend’s referral.  You still need all of this – you need to be passionate and you need to care and to do your best at all times. But just recently a lady came into Pig Halle and as I was serving she asked if I was Paula. “Yes…”  Now I never forget a face, names yes – faces no!  She told me she’d found us online and had read all of the blogs! She knew about Herve and I meeting in Cafe St Honore, she knew about the stag head and the kids being away from home….!  She thought we sounded friendly and decided to come in and visit.  My “blethering” as you Scots say, preceded the food!

So now, in this 21st century restaurant life, you need a website, a facebook page, a twitter account, an e-shot, a pinterest board, a blog…. sometimes I look at my husband and I think… “But we’re still in the business of selling good food and happy memories. That’s the game we signed up for!”

If I’m being entirely honest, I love it.   I haven’t embraced it all – I like my blog (I’ve hijacked this part) and I like facebook.  The part that requires lots of stories and talking!!   Herve has been less involved… until recently.   Enter Cain Martin and his video camera! Cain is ages with Max, in fact they went to primary and secondary school together.  He’s off at uni doing art with digital media and he came into DUO to film Herve in the kitchen.  Suddenly he was loving a little technology – throwing his pizza dough and giving the bread a little flourish.  I love these little clips – the music, the food, the short snappy film that speaks so much more than a paragraph on a leaflet ever could! You can almost smell the bread!  The fact that the child took off with my lunch is almost forgiven… Click on the links below to see the videos!
