PIGHALLES NEW BABY SISTER AND FREE PIZZA FOR ALL!

Hello to you all!

I’m catching my breath as I write this! It has a been a fantastic week and we’re delighted with the response we’ve had to DUO!  The opening night was a great success, not too many gremlins to sort out (turns out Herve was right when he said lets run the DUO menu in Pig’Halle for a week’s trial instead of having a holiday..!) and the feedback….!! The feedback has been wonderful!   I’m slightly worried about all that pizza, fresh bread and my waistline but its soooo hard to resist!

We had a funny moment during the week when of the team said that DUO was like having a baby sister come home! It was the centre of attention, the grown ups could think of nothing else and things just wouldn’t be back to normal until it was in its own room! Well, it is in its own room now but just like the last time Herve and I brought home a baby sister, I doubt if life will ever be the same again!

So… I promised I’d chat Pizza this week. What’s with the wood burning oven obsession? We had one a Breizh where David still does a roaring trade in freshly made bread and oven baked pizzas.  When we decided on DUO’s menu Herve was like a kid in a sweetie shop. A new oven!

You see, making good pizza  starts in the dough. Like all great food, dough is about a simple recipe but you must use the best flour and olive oil you can source and you must handle it with care.  You want to make a lovely elastic-y dough and knock it back to just the right texture.  Its a craft like any others.  But for me, the real flavour, the texture, that crisp delicious base and hot, soft cheese topping comes from the oven.   The traditional wood burning oven gets up to the hot, hot tempertaure that you need to get that perfect, delicious balance of crisp base and bubbled cheese.  The wood gives an extra layer of flavour that gives the unmistakable flavour of an authentic pizzeria.

Add in the best mozzarella, toppings such as Proscuitto San Daniele, Chorizo, Salmon, Scallops, Crab, Haggiss…. And oh my you’re in food Heaven!  The simplest dishes are so often the best and the humble pizza gets my vote every time!

 

DUO TAKEAWAY

So… The takeaway is a first for us! We’ve always offered it to those people who were looking for something to take home but we’re all geared up for a proper service that will eventually lead to home deliveries and online orders… My heart is racing just thinking about it! Still, in 25 years I’ve never been a Pizza Delivery Boy so that’ll be another line for the CV!   Because you know you’re going to see me standing at your front door, grinning, with a stack of boxes and bag of bruschetta!  I’d just like to say for the record now – I am NOT wearing a baseball cap!

Until then! We will be offering the full DUO menu as a takeaway option from our Deli (entrance from 2 Princes Street). This means those wonderful wood burning oven baked Pizzas can be enjoyed on your sofa, in your pyjamas, watching Dancing on Ice!   You can drop in, phone and collect or book in advance.  Our Menu is available on our Facebook Page until the website is up and running (Takeaway prices are less 10%).  If you’re on the mailing list you’ll have had your Buy One Get One Free Offer already – if not, get signed up!  We’re going head to head with a well-known pizza chain to prove that you get better value, better quality and a feel good feeling from choosing a local, family run takeaway! so TUESDAY NIGHTS are Buy One Get One Free on all Takeaway Pizza!
