HOW A GIRL FROM PORTUGAL ENDED UP SO FRENCH!

Hello Everyone!

How is 2013 treating you? All good I hope!

I promised last week that I would pay some special attention to our gorgeous Pig’Halle.  DUO has launched, its already VERY busy and we’ve had some great feedback. So lets chat French for a while.  Get ourselves in the mood for the romantic month of February approaching!

The French Brasserie is a Way Of Life in Paris

When we looked at setting up Pig ‘Halle we knew we wanted to go back to our roots and do a  traditional French Brasserie.  The Brasserie is a very Parisian affair, its informal, relaxed but with an air of sophistication and style that the French do so well.  So, there is no Chi-Chi fuss and nonsense, just great food, great service and beautiful surroundings.  In Paris if you want to eat out for an extra special occassion then you go to a restaurant; every day lunch and dinner, meeting friends, stopping for a bowl of moules frites, Fixe Prix daily menus… that’s brasserie time!

We have found that the concept isn’t as widely known in Scotland – still! Perhaps the decor gives the impression of an up-market eaterie. Au contraire! The decor is themed around the Parisian Metro area that inspired our name, PigHall.  This bustling zone is home to one of my favourite streets on the planet – Place De Cliche.   Heady and intoxicating, PigHall is where you will find the world famous Moulin Rouge and all of her mistresses.  Our interior represents the sexy, velvety red,  sleek black decor and endless mirrors of Paris’s red light district!   There – the secret is out!  Its less upmarket and more brothel! But oh my…. the food is up there as one of life’s favoured pleasures.Just as it should be.

I met Herve when we were both travelling around Scotland in (deep breathe!) 1990!   I was a young Portuguese girl, trying desperately hard to improve my spoken English.  I ended up in Edinburgh working front of house for Cafe St Honor when this tall, handsome Frenchman came looking for work. The rest, as they say, is history

We married quite quickly and decided to stay in Scotland – we had both fallen in love with your crazy ways and stunning cities & countryside.  In 1994 we took over our first restaurant, a French Brasserie called Jacques Bistro in Gillespie Street in Edinburgh. I adored it! It was soooo French! Blue checked tablecloths, wine bottles for candle holders, Fixe Prix lunch and pre theatre menus.  It was chic and sexy and we were crowded out lunch and dinner; hungry for a successful business.  Max was just a baby at the time and I was already pregnant with Roxanne – he would sleep in the store room while we did the evening shift! No wonder that boy doesn’t want to join us in the family business! Ha Ha.

Pig’Halle brought us full circle back to this concept. We love it. I relish the chatter, the easy nature and informal manner of a brasserie. I like that you can pop in at lunchtime and have one course, a glass of wine and get back to work inside an hour; or meet up with friends and relax over a 2- course fixed prix.  In the evening, zip in quickly before the theatre or kick back and relax.  Go for three courses, wine, liqueur, coffee, another wine – shall we share cheese… it should be long and easy going at night.

For me, the food is the jewel in the crown. I adore French cooking and my husband is one of the best chefs I know. Not that I’m biased! Our name, I think, started a strange Perth rumour that we are all about the Pork! As I’ve explained… we’re named after my favourite Parisian Street’s Metro Stop!  How funny!   We do pig on the menu but we have only two dishes – two fabulous dishes I may add.

But as well as this, think a stunning Chateaubriand served with hand cut chips or dauphinios potato and bernaise or red wine jus. Think slow cooked lamb, gratin de poissions and the all time favourite Beef Bourguignon.  And the French Fixe Prix… which I think we all need to embrace a little bit more!  Two courses of fine French cooking for under £10! Only from people who understand the love of a good lunch!

Folks, I may hail from Portugal, laid my hat and raised my family in your glorious Scotland; but when it comes to food… my heart belongs to France!
